Five course dinner featuring Virginia cider paired with favorites from the Chop House menu.

The Menu:

1st Course

scallop cider ceviche, grapefruit and avocado supreme,

green apple jelly

paired with Albemarle Cider Work’s Jupiter’s Legacy

bright acidity with notes of citrus this cider has a nicely astringent tannin with a tart apple finish

 

2nd Course

pork head, sausage and apple rillettes, GF cider buttermilk biscuits, apple citrus butter, cider wilted greens

paired with Old Hill’s Yesteryear

with a fresh apple aromatic nose this is a well-balanced more tart than sweet aperitif cider

 

3rd Course

pork belly shabu shabu, cider salt compressed pork belly, winter herb poached root vegetables, apple spheres, crispy shallot, mango cider BBQ broth

paired with Potter’s Hop Cider

Tropical fruit notes from Albemarle Pippin and Gold Rush apples are complemented by the juicy citrus character of whole-leaf Citra and Amarillo hops. Our unique cold infusion process brings out delicate hop aromas and flavors without the bitterness you would expect in a hoppy beer.

 

4th Course

crispy skin seared duck breast, smoked sweet potato puree,

vanilla brandy braised apples, cider emulsion

paired with Potter’s Oak Barrel Reserve

Patiently aged in oak barrels sourced from a local apple brandy distillery, every batch of this handcrafted cider develops unique character and complexity. Traditional barrel-aging techniques produce a full-bodied cider with intense aromas of caramel, vanilla, and toasted oak. Bright fruit flavors (crisp apple, pear, brandied cherries) give way to butterscotch and toffee with complex tannins in the finish.

 

5th Course

pork fried GF apple fitters, powdered sugar, cider whipped fat, candied orange

paired with Old Hill’s Season’s Finish

our ice style dessert with its deep gold color is round and viscous. Its long, silky, smooth mouth feel has flavors of apple, pineapple, red cherry and toast.

 

6th Course

cider ice cream with cayenne and maple

paired with Albemarle Cider Work’s Pomme Mary

this fruity cider is made from vintage American cider apples and is enhanced by a bit of sweetness. It sports mellow notes of tropical fruits- mango, pineapple, or kiwi.
