Frozen Peach Belllinis

Just like the brunch drink, but even more refreshing on a hot summer day in peach season!


2 peaches - peeled, pitted1 teaspoon sugar1 teaspoon fresh squeezed lemon juice1/4 cup peach schnapps1 cup crushed ice - more if necessary1 cup dry cider (try Royal Pippin or Jupiter's Legacy) - chilled - more reserved for topping off glassesThinly sliced peach wedges - to garnish {optional} 


Place peaches, sugar into blender (food processor) and puree. Transfer to refrigerator to chill completely.When Proscecco and peach puree are completely chilled and you are ready to make drinks, add: peach puree, lemon juice, peach schnapps, crushed ice and Prosecco to blender.
