Classic Quiche Loraine

Crispy, buttery, flaky, savory, cheesy: it's easy to find adjectives for this delicious classic. The hard part is choosing just a few.

Bake a quiche, and it somehow feels like you have your life together. It's one of those simple, achievable joys that feels a little more special than the effort it requires. Pair it with one of our crisp Bruts for brunch, and you've got something worth celebrating.

Ingredients

Ingredients:

  • 3 strips bacon
  • 3 large eggs, beaten
  • 1 1⁄4 cups heavy cream or half and half
  • 1 tsp salt
  • 14 tsp white pepper
  • 1 pinch nutmeg
  • 3⁄4 cup grated Gruyere cheese, divided

Directions

Instructions:

1. Bake a crust (of your own or a purchased one) until crisp and lightly browned.
2. Cool slightly and fill
3. While crust is baking and then resting, cook bacon over medium heat until browned and crisp. Transfer to a paper towel to drain and then crumble.
4. Whisk eggs with cream, salt, pepper, and nutmeg until well blended. Scatter half the cheese in an even layer on the bottom of the crust and top
with bacon. Pour custard on top, then top with remaining cheese. Bake quiche on middle rack of oven until custard is set and quiche is browned on top, about 35 minutes.
5. Let cool for 15 minutes, unmold, and serve.
